Description
Matki or Moth Beans grow widely in drought prone regions, they are creepers that grow in arid regions receiving scanty rainfall, native to India and a crop that helps fight soil erosion. Moth Beans are protein rich legumes, also contain a variety of vitamins, minerals and calcium. These are cleaned by hand and unpolished to retain nutrition.
Usage
Matki can be cooked to make delicious curries or can be sprouted and added to salads. Sprouted Matki is traditionally used to make Usal or Misal in Maharashtra. Pre-soaking the beans is recommended before cooking to reduce cooking time.
